
Heading out of town, cleaning out the fresh stuff in the fridge: peas/old crusty parm/an odd hunk of coppa….when life gives you peas and ham, you make risotto. First grate some parmesan, old and ornery, then toast some rice. Use onion if you have one–I didn’t. No broth either. I just used hot water. No Wine? no problem. Use that bottle of fino sherry that’s been slow to drain–it works just fine. Add the first shell peas you’ve gotten from your CSA, and some parsley too. Don’t forget the cheese and butter. Let it sit for a couple minutes, then spoon into a bowl. It looks nice, yes, but it could use something more, yes?
Put an egg on it!
